This beer was brewed in collaboration with Italian Craft Beer Legends - Birrificio Italiano from suburbs of Milan. We had the idea to somehow unite the Lithuanian and Italian beer tradition in this one product that we wanted to produce together. That's why we chose Keptinis, an authentic Lithuanian beer style. The unique thing about Keptinis beer is that you bake your mash in a wood oven for at least 4 hours. A large percentage of water evaporates and caramelizes the mash from high heat. This method creates dark spice from pale malts and adds some caramel toffee flavors and aromas to the final beer. We have also converted our lauter tun into hop bake and put our spice into circulation through the Cascade and Emilia hop cones bred in Italy, hoping to get light citrus notes and floral notes.
