The image of a fox with nine tails is often associated with Japanese mythology, but Korea also has its own analogue to this mysterious creature. Kumiho often carry a bead in their mouth that gives them magical power and intelligence, but their main difference from other fox spirits is that they have far from friendly thoughts and dispositions. That is why in Korean myths these tailed animals are the embodiment of the danger of the wilderness. In addition, they gained this reputation because wild foxes were constantly raiding the henhouses and properties of the inhabitants.
However, despite all the terrifying legends, we still managed to tame this wayward beastie, so unlike its big sister Kitsune, Kumiho is less fortress-like. The tropical duo of apricot and orange is complemented by a tart combination of lime and a pinch of salt, all of which combine to give a delicate yet distinctive flavour.
