Beer description
Shankankan, a Japanese Zen story teached us to be calm, don't hurry, take your time, patience makes perfect. So we did, in 2019 Thibo started up a Koji, after months of feeding the koji he blended it with 50% of grains to brew an american barley wine co fermented with Sake yeast. After brewing we filled jamaican rum barrels until patience made it perfect which ended up to be over 4 years of time!
