Beer description

The combination of English Ale yeast and bold American Zeus hops creates a unique sharp nose of spicy herbs and tart lemon. Noticeable grassy and straw hop flavors, intermixed with slight peppery notes, intentionally outweigh the grain contributions from the smaller than normal malt bill. An intense bitterness resemblant of arugula and other bitter leafy greens takes over, before leading to a dry finish. Once fermentation has taken place, a special gluten consuming enzyme is added to drastically reduce the overall gluten content of this beer, leading to a lighter mouthfeel.
