Sibeeria - Eternal Winter

Barrel Aged English Barleywine, 30° Plato, 10.1% ABV. We brew our barley wine with a different recipe each winter, and we fermented this one a little less two years ago to prepare it for the long aging in wood. Thanks to a simple topping and slow, careful fermentation with a distinctive English yeast, it was already quite complex before we put it in the big old Sherry casks that one of our favourite single malt Scotch whiskies had matured in. Also in a fresh bourbon barrel. We then left them for a long 14 months. The intense notes of Sherry blend beautifully with the fruity esters, giving the whisky a pleasantly warm note, while the bourbon adds a vanilla sweetness and the wood tannins balance the smooth amber body. This beer is meant to be enjoyed for a long time from a nice glass. If you store it properly, it will last for many years, but there's no need for that at all - it's had plenty of time to lie around in our house.
