It’s our cherished tradition to brew a Christmas NEIPA that reflects the knowledge and techniques we’ve gathered over the past year. This time, that means using London Fog yeast, a hefty dose of not just oat, but also wheat flakes, plus modern hop products: Citra Dynaboost in the whirlpool and Nelson Sauvin Hop Kief for dry hopping. On top of that, we added a generous amount of Citra Cryo and Nectaron. The result is a very pale, hazy IPA—soft yet bold, full-bodied yet drinkable, and above all, intensely aromatic.
