Fermentation
Beer description
In 2019, this brewery created a French-Belgian farmhouse season (pronounced san) that was fermented on Scandinavian pine needles with a hint of juniper berries. The word season in French means "season" because it is a traditional seasonal beer among the farmhouses. The yeast is very special for the season, it originally comes from the Walloon region of Belgium, has a tart, spicy, peppery taste and a wild microflora to create a funk on the farm. At the end of the seasonal yeast, we complete the fermentation with our unique house mix of five Brettanomyces strains + sediment from two Belgian favorites. Combine that with the pine needles, a hint of juniper berries and you have a uniquely progressive beer. The color is golden, cloudy at a young age. The master brewer thought it would be called Tree Hugger, a play on words for environmentalists embracing trees. February 2019 you produced the first batch of this beer in a 1200 liter fermenter. Each bottle is marked with the batch number near the expiry date.
