DISCIPLINE is a value that we maintain every day, correctly and simply. It is not an external constraint, but habits that spontaneously lead to the desired results. After many experiences and studies, we decided to share what is a milestone for us. Our first beer fermented with a yeast mixture !!! The goal was to maximize the fruity and floral aromas from the biotransformation in Hazy IPAs. Ordinary "New England" beer yeasts have this ability, but some wine strains are much more efficient at hydrolysing the glycosides present in the selected hops, further enhancing the aromatic profile!
