Beer description
Spontaneously fermented sour ale with tart cherries - Last summer, our entire production team went to our friend Brian's house in Ludington to hand-pick some tart cherries. We decided to spontaneously ferment 75 gallons of wort with the yeast from the cherries. After a long primary fermentation and maceration, we transferred the beer to age in a single oak barrel for nearly a year. The resulting beer is beautiful! It has a strong aroma and flavor of tart cherries, as well as a nice finish reminiscent of cherry pie crust.
