Spontaneous, sour
Fermentation
Beer description
First official collaboration with the guys from South Soul Brewing, and it's immediately South, it's immediately summer. The Brazen Bull is to be drunk in buckets to kill heat and thirst, always in our own way: passion fruit, lime and tarragon are in fact the stylistic notes that distinguish this incredible new torture.
The base is a Berliner Weisse in style, with generous wheat and zero hops. The colour is opalescent yellow and the foam almost evanescent. The lactic acidity is not pushy but echoes the style strongly. The sour notes blend perfectly with the fruity ones of passion fruit and lime. A delicate balance of citric, acidulous and fruity sensations, driven by tarragon, which acts as a skilful binder, with a slight hint of savouriness.
Fresh on the nose, it enhances in the mouth, turning into a fast and slippery drink. Zero body makes it almost dangerous as if it were a refreshing drink. After the first sip, one gets trapped by the bull and never comes out again!
