Beer description
The Song of the Earth is a spontaneously fermented golden ale aged on mushrooms. For this 2018 harvest first edition locally foraged chanterelles were sorted, diced, and added to mature beer that had nevertheless failed to fully attenuate. After a ten month mushroom maceration, the beer finished its fermentation, earth-given. An average age of two years at bottling, this blend was naturally refermented and conditioned in the bottle.
