Black beer from grilling in collaboration with Antcicada Now the start-up has teamed up with the Tono brewery in Iwate Prefecture to bring Japan's first hand-made grilling beer onto the market. More on the topic: Japan wants to give companies tax breaks if they invest in start-ups. The Cricket Dark Ale is only made from special local crickets that are carefully roasted. These roasted crickets and roasted malt are added to the mash to accentuate the taste of umami produced by the crickets. The crickets used are supplied by the company Taiyo Green Energy. There the little animals are raised in an optimal environment, in terms of temperature and humidity. At the same time, the crickets are fed with vegetables and other foods that are left over as waste products in the production of food in the surrounding companies. The crickets are carefully washed before delivery and specially heat-treated for quality assurance. The new barbecue beer is said to contain aroma notes of coffee, cocoa and chamomile. At the same time, a certain bitterness remains. Above all, a generous caramel note is said to tickle the Japanese palate. The umami aroma should also remain on the tongue for a particularly long time.
