Spontaneous, sour
Fermentation
Beer description
A blend of sour pimbina red ales (45% matured in oak barrels + 55% freshly brewed). Trou Norman is a sour pimbina rousse from Palmarolle. This wheat beer stands out for its acidic taste, fruity and caramelised aromas and low bitterness. The beer's acidity comes from a 48-hour lactic fermentation of the wort (sour wort). As well as offering a nose of candied fruit, it has a sweet, tangy taste that makes it refreshing (SRM 17).
