Henricus Knaust from Hamburg was a real smart man, trundled through Europe and loved beer so much that he wrote about it in 1575: “The art of brewing beer” is not just a damn old ham, but is one of the most important beer books in the world. So let's toast to Knaust's 500th birthday with a characterful beer from his time: Master brewer Tobias Hess has brewed a top-fermented, malty-aromatic and characterful beer, hearty with a light smoky note and nowadays rather unusual types of grain. As a finisher, the brew was refined with sea salt, lavender, cardamom and juniper berries, as was customary at the time. Style: Historic Ale
