When we approached Upland about a sour beer, there may have been some justified concern from their brewers. The path to a delicious sour beer is paved with much uncertainty. How will the sour mature, how much characteristic will it get from the barrel or from the fruit? What fruit to use? Who are the idiots at teds coming up with these weird combinations? Fortunately, for this teds sour beer, we left all the hard work up to the experts at the Upland Wood Shop, leaning on them to help us hone in on the right fruit (locally sourced apple and persimmon with a bit of quince), the right base beer (a blonde ale), and the right blend (we helped with that a bit!).
