Whiskey Hill - Catalyst

A blend of Buffalo Trace, Heaven Hill, and Wild Turkey Barrel Aged Imperial Stouts. Years of tasting and note taking through our barrels while selecting specific blends for each of the 8 previous BA bottles has allowed us to set barrels aside for our eventual non adjunct BA stout. Using those notes, we set the goal for Catalyst as a challenge of showcasing the myriad flavors that bourbon barrel aging and different spirits can impart upon an otherwise roast forward and dark chocolate dominated base stout. Here are some notes from the selected barrels: 7 yr Heaven Hill - RIS Project 4 - 14 months: “Flavors of light tobacco, dried dates, and baking spice infused honey with a medium body.” 6 yr Wild Turkey - RIS Project 3 - 16 months: “Sweet and dark fruit forward vanilla dominate the palate, with mixed roasted nuts following and a warming cinnamon bourbon finish.” 9yr Buffalo Trace - RIS Project 6 - 12 months: “Brown sugar and intense charred oak lead, followed by heavy notes of bitter dark chocolate and molasses.” We hope that Catalyst gives you a look into our purposeful barrel selections that we make for each BA offering, and that it gets you all excited for even more non adjunct BA stouts to come!
