Bourbon Barrel Aged Imperial Stout with Sweetened Toasted Coconut, Unsweetened Toasted Coconut and Raw Coconut Flakes. On the first sip, you’ll immediately notice one thing for sure; this is a huge beer. Over 200lbs of various types of coconut uplift an already heavy chocolate and oat forward grain bill to new levels of decadence. With each sip afterwards and as the beer warms up, Coalesce brings together the myriad flavors that coconut in all its different forms has to offer. Toasted sweetened coconut adds a cookie dough and sweet brown sugar flavor, toasted unsweetened coconut lends notes of honey graham crackers, and raw coconut flakes give this beer a remarkably fresh and natural taste. At the finish, bourbon heat and charred wood coat the palate and linger for just the right amount of time before the next sip.⁣ For barrel selection, we were careful to select our most spirit forward barrels that could stand up to all the intense flavors of the base beer and various coconut additions. The overall blend had an average aging time of 15 months in a mix of 8yr Buffalo Trace and 5yr Wild Turkey barrels
