Beer description
At Wild Heaven we've developed a hybrid process taking 3-6 months and the resulting beers fall under our Wild Wild Heaven Innovation Sour Series. This proprietary process allows for the development of layers of flavor using a mixed fermentation including our house-cultivated wild yeast strain as well as the addition of hundreds of pounds of fresh fruit providing more fuel for additional fermentation. These are "it's ready when it's ready" beers, made with a tremendous amount of care.
Fortress of Sour Peach Sour Ale is brewed with real Pearson Farm peaches, and refermented with the natural yeasts occurring on the skins of those very same peaches. This is as Georgia as it gets!
