Spontaneous, sour
Fermentation
Beer description
This Caribbean stout started off in stainless steel, fermented with an ale yeast strain. After fermentation was complete, two rum barrels were filled and our wild yeast was pitched. After a year and a half in barrels, this beer is finally ready. The nose is full of typical stout aromas with a hint of dark cherries from the wild yeast and light rum notes from the barrel.
