Beer description
An assertive Abbey-style dark strong ale brewed with an eye towards tradition, but with Wild Mind weirdness. A melange of pale and specialty dark malts create a sticky caramel colored wort thats boiled for hours; before being racked on to used barrel staves in our wood cellar coolship to inoculate with the native microflora. Fermented in stainless steel. Once terminal gravity is reached we re-ferment with Brett. Claussenii, sweet cherry, and buckwheat honey. A deep, sweet, funky, sipper perfect for celebrating.
