Beer description
This saison was open-fermented in a square tank in our wood cellar. It marks a new beginning in our process for our saisons and we hope to see this style develop a character unique to our brewhouse as we go through future generations. The open fermentation and the square tank encourage the yeast to produce more of its signature ester profile. It showcased itself here with a strong spicy note with a hint of banana.
