Beer description
Descriptive Economy 2024 is a blend of ales aged with plumcots, Organic apricots and Ebony Sun Plums.
The ales were brewed with Organic red wheat and Organic heritage barley wholly fermented by a diversity of yeasts and bacteria collected from native flowers from NSW. The first was macerated with 350g/l of plumcots from Yarralee Orchard in Bathurst, NSW for five months before being blended with two ales that were macerated and refermented with Organic Red Yellow apricots from Block 11 Organics in Orange, NSW and Ebony Sun plums from Thornbrook Orchard in Orange, NSW both at a rate of 400g/l for five and four months each, respectively.
It was bottled with raw, unheated Blue Mountains Polyflora wild honey from naturally formed, bee-friendly Warré hives from Tim and Emma Malfroy and allowed to naturally condition and carbonate before release. Made exclusively for The Collective.
If my memory serves me correctly, this is our first triple-fruited beer. It was born from tasting the apricot character from Greg's organic fruit and imagining how well that would support the plumcots from Kernel Stone. Additionally, this is one of our first beers to use raw honey in conditioning and the result is really lovely, bringing an extra sweetness I havent seen in the beers before, which really supports the fruit in this one. Very excited to see what yall recon about this one.
