Spontaneous, sour
Fermentation
Beer description
The third and final release of our trio of young beers made with perennial grains. This one, like Mountain Rye that came before it, is named after the perennial grain itself, GT235a. Admittedly it is not nearly as cool as 'Mountain Rye' but I kind of liked it anyway so we rolled with it and here we are. Made with a grist of organic malted barley and approximately 15% raw, unmalted perennial grain.
Hop derived earthy spice, deep earth notes of clay and dark spice. Grass, winter mint, sweet fresh cut hay bale. Touches of citrus. Simple and refreshing. Bright citrus with poppy carbonation. Low but citrus laden acidity with a hoppy punch to close.
