Beer description
Jaune d’or, yellow gold, is a golden barrel-matured mixed culture ale aged in an untopped barrel of chardonnay wine from the 2018 harvest. The wine was made in-house at Wildflower with direct press juice from Murray Smith of Canobolas-Smith winery in Orange, NSW. It fermented with indigenous yeasts in barrel and was left on ullage to encourage oxidation and the development of apera yeast flor. After four years resting in barrel, the wine was removed and a 15 month-old barrel of Gold was placed in for a number of months before blending and bottling in November 2022.
