Beer description
Made in collaboration with our friend Tim Ward, this ale was made using lightly pressed Lambrusco Maestri skins from the 2023 harvest grown by Chalmers in Heathcote.
During harvest we made a quick trip up to the Hunter Valley to collect the skins the morning after Tim’s late-night pressing, brought them back to Marrickville and soaked them for six months on both fresh and aged Gold brewed with regenerative organic grains wholly fermented by a diversity of yeasts and bacteria collected from native flowers in NSW.
This extended maceration lends the beer both tannin and colour from this unique variety. A sparkling red (ale) fit for the Christmas table
