Beer description
A copper coloured, higher alcohol ale inspired by the aged beers of Northern France made in collaboration with Porcine Bistro, Paddington.
Brewed with NSW grown regenerative organic barley and organic raw rye, hopped with NSW-grown Red Earth hop flowers. Unfiltered and bottle conditioned, Poolroom showcases the younger side of our mixed house culture wholly collected from native flowers in NSW.
Poolroom is roughly a biere-de-garde. a beer 'to keep' (literal translation of 'de garde') made with Paddington's Porcine bistro. Their menu, unabashedly French, called for a french-tradition beer. All Wildflower beer, in a way, is in this vein but we never have really sought to attempt this style which balances malt sweetness with high fermentation esters and a firm but evasive bitterness. Poolroom pays respect to the traditional biere-de-garde method of an extended boil and incorporates the less traditional spice of rye grains. a nod to chef Nik Hill's relationship with Voyager malt
