In 2021, St Florence: Semillon (Tyrrells) was made by blending barrel aged golden mixed culture fermentation ale with 125kg of handpicked, whole bunch Semillon from Johnno’s Block at Tyrrell’s Estate in Pokolbin, NSW. After a five month maceration and refermentation of fruit and beer, it was bottled and allowed to naturally carbonate and mature in bottle for several months before release.
