Beer description
Withering into Anonymity 2024 is an ale cofermented with koji.
The ale was brewed with Organic heritage barley and Organic malted wheat fermented by a diversity of yeasts and bacteria collected from native flowers from NSW. As primary fermentation was finishing, it was blended with steamed barley and rice inoculated with Black Plum koji spores, Aspergillus luchuensis. This blend is the brainchild of Brayden.
The ale and koji parallel fermented for two weeks before a further six month maturation in oak.
It was allowed to naturally condition and carbonate in bottle before release. Made exclusively for The Collective.
At release it has a distinct aroma and flavour of orange citrus which is specifically derived from the koji. These grains, even as they were growing had this real plum, citrus mix to it which has transferred well into the beer. The palate shows cola and sarsaparilla ahead of a leathery, bretty, hessian, burlap backend. This is one that improves as it opens developing sweetness and more mandarin-juicy flavours late.
