A mixed fermentation that includes a diverse blend of Saison yeasts and a classic Brett strain offers a surreal blend of flavors and aromas. Nearly a year of aging in our American oak foeders results in a smooth and characterful Brett Saison possessing flavors reminiscent of rich berries, dark fruit, piquant Brett funk, and baked pie crust.
