Description
The Dom in Neuss has been in existence since 1601 and has been operated as a restaurant and brewery ever since. Part of our beer production takes place in the historic, listed rooms of this traditional establishment.
Since 2016, our brewery has been led by Master Brewer Thorsten Kelm, who has many years of experience. Among other places, he has worked in Switzerland, at Augustiner Bräu, Brauerei Reissdorf, and as head brewer on Aida cruise ships.
His philosophy:
To create a wide variety of beers using only traditional ingredients. Preservatives are out of the question for him. Because it is unfiltered, it contains more nutrients, such as yeast and proteins. This makes the Dom beers very full-bodied—though, of course, this brewing method also results in a shorter shelf life.
From malting to bottling, everything is done entirely by hand.
Beer from Brauhaus Im Dom is not “organic,” but it is brewed in a very resource-efficient manner. The malt comes from nearby (Wallertheim) and the hops from the Hallertau region. The water comes from the Neuss waterworks. 😉
Brewing produces very little waste. The spent grain (malt residue) goes to a dairy farmer in Neuss-Grefrath. The bottles are reused via a returnable system. Sales are regional.
