We brew on a 3-device brewhouse (consisting of a mash/wort kettle, lauter tun and whirlpool) from Wengert Brauanlagen in Ravensburg/Germany. Following the expansion of the brewhouse capacity, the production volume, known in the trade as ‘lauter wort’, has now been a good 500 litres per brew since May 2015. On each of the brewing days, which last around 11 hours, we run a double brew, which results in around 1,000 litres of wort.
In the fermentation and storage cellar, after three expansion phases, there is a 500 litre fermentation tank, 4 storage tanks of 500 litres each, 4 cylindroconical fermentation/storage tanks (2×1,000 litres and 2×1,200 litres) and 1 500 litre pressure tank.
After the fourth and final expansion phase in spring 2016, the facilities will be designed for an annual capacity of at least 40,000 litres. We now hope to be able to meet the constant demand, including for the popular speciality beers, to some extent in the coming beer season.
