In a country where tradition is strong and the challenge of change is imminent, the founder and master brewer of Cervecería Calavera (also known as Calavera Brewing), Gilbert Bjørn Nielsen, produces a variety of complex beers that are rich in taste and are marked with symbols from Mexico's colorful history. Gilbert is originally from Denmark. As a small child, he emigrated to Mexico with his parents. He later returned to Denmark as an adult, where he studied at the Technical University of Denmark. There he graduated as a chemical and biophysics engineer before finally returning to Mexico, where he founded his home and enlarged brewery. The brewery originally produced 100 to 200 liters of beer a year. By 2010, he was producing 25 barrels with a 50-barrel fermenter. It currently produces around 1,200 hectoliters or 1,000 barrels. Cervecería Calavera was founded in 2008. The brand builds on the Mexican tradition of giving sugar skulls as symbols of death and reincarnation. His wife Elizabeth, a graphic designer he met in Denmark, was born in Mexico. Elizabeth is the main designer of the labels for Calavera beer. The steadily growing production of Calavera currently includes five creations as well as beer specialties and seasonal beers.
