Sonia is in charge of the front of the house. She also coordinates the new local artist on the pub walls every month, the live original music on Wednesdays, special events and is in charge of marketing. Dan is the brewer and likes to make English style beers as well as the wine, hard cider and an occasional mead. The brewhouse is a 7-barrel system, making 217 gallons at a time. There are always 12 beers on tap, 2 on cask, 2 wines and 2 ciders on tap. Dan also has 4 oak barrels that he ages beer in and serves as barrel aged specialty beers. There are seasonal beers in Dan’s rotation and lately he has been experimenting with putting habanero, jalapeno, and serrano peppers, as well as other spices in firkins of beer that is tapped and served on the counter in the English tradition. As customers walk into the pub they will notice the ceiling full of hanging mugs. This is EagleMonk Pub and Brewery’s mug club which currently has almost 1900 members. The ceiling is full with mugs being hung down the hallway. The mugs are made by 3 local potters and are available with the lifetime mug club membership for $75. Customers retrieve their mugs using a step stool, take it to the bar where it is washed and filled with their favorite beer.
