The motto of the Neuner family, who took over the brewery in 1864, has remained the same for 5 generations: regionality means freshness, variety of flavors and top quality. When selecting raw materials, we have always focused on the highest quality from local regions; The finest hop varieties from the Hallertau and malt from the Upper Bavarian region give the individual beers their specific character. What about the water? Even today, the excellent brewing water comes from the "Stell" on the Lautersee, a separate spring that has been used since 1830 and still provides an important component for the very personal note of Mittenwald's beer specialties. Today, the Mittenwald Brewery presents itself as a medium-sized company, equipped for the future, both in production as well as in sales and administration. The tendency towards tradition in the time-consuming production of high-quality beer specialties and the consistent implementation of a flavor-enhancing brewing concept has remained. Each brew is individually boiled, fermented and stored for an average of six to twelve weeks in order to develop its own personal note.
