MARTIN DESAUTELS
BREWER AND OWNER
AT THE BRASSERIE
Martin fell under the spell of the Caracole brewery during an enlightening brewing trip to Belgium. This establishment was still brewing the old-fashioned way, forgoing the large stainless steel vats for the traditional wood fire.
The idea caught on. Martin called in a local company to design a special vat adapted to his needs. After two years of work and adjustments, the tank is now operational. With a capacity of 2,000 litres, it is heated by a wood-burning stove, and a high-tech control panel is used to adjust the parameters. During stirring, the direct contact between the fire and the tank ensures that the heat rises rapidly.
