Spontaneous, sour
Fermentation
Beer description
The sour white of Branta from Niebüll is brewed after the model of the classic Berliner Weisse. The North German Carsten Jepsen has used his own house yeasts from Belgium, Brettanomyces yeasts and lactobacilli to give his beer something special. And that's exactly what he did. Its top-fermented, acidic beer trumps already in the nose by citrus fruit aromas. The wheat content ensures a soft body, which helps the fruity acid in the unfolding.
