Premiered at Beer Geek Madness 2025!
A wild beer fermented from the start in a wooden foeder. The exact age of this beer is hard to determine, as a "solera-like" system is used. The foeder was first filled with beer in early 2022, and by the end of that year, this beer was used for creating blends and filling barrels, but the foeder was never fully emptied. About 1000L of one-year-old beer was left behind, and in 2023, it was topped up with young beer, continuing this cycle every year. This means the foeder always contains a mix of older and newer beers, improving the aging process of the young beer. This version was generously hopped just before bottling with New Zealand’s Nelson Sauvin hops.
