Beer description
~ 1/3 Marie Ménard (bitter), 1/3 Douce Moen (bitter sweet), 1/3 Judor (sour) ~ 20 g/L sugar. 6 years Solera. The cider is aged in eau-de-vie de cider barrels; since 2013, 1/3 of the juice is kept in the barrel for the following year. Solera 2018 includes the juices of vintages 13, 14, 15, 16, 17 and 18 fermented together; no filtration, only decanting at bottling. The native yeasts have been working for several generations to create a unique cider. 500 bottles are produced per year.
