~ Guillevic ~ Miel de printemps. 10g/L sugar. 30 hl/ha, no maceration. 5 months fermentation in a 10 hl tank. Bottled in March, the apple juice and honey were mixed from the start of fermentation. The honey increases the alcohol content and brings floral notes to the cider. Chouf is an ancient local drink from Brittany, made by farmers when honey production was low. If the amount of honey was important, they could make chouchen (highly alcoholic mead requiring at least 300g of honey per liter of juice). With the unification of agribusiness and the abandonment of local farms, the chouf fell into oblivion...
