Beer description
~ Guillevic ~ 30 g/L sugar (sweet). Monovarietal cider made exclusively from Guillevic apples. The sour apple requires special attention when fermenting its juice. Racking and temperature control (for slow yeast development) are necessary to achieve the right sugar-acid balance. The complexity of this process results in a lower production volume, hence the name 'P'tite Cuvée' ('Small Cuvée'). It is the typical and emblematic cider of southern Morbihan; very fine bubbles, a fragile yet delicate cider, sparkling and fruity.
