Since Carl von Linde invented artificial cooling in the 1870s, breweries have been cooling their beers in cold stores or cooling tanks. Today, Graser Felsenkellerbier is stored in the historic rock cellars beneath the brewery, just as it was centuries ago, without artificial cooling. At a constant ambient temperature of 8 to 10°C, it matures evenly at a moderate cold temperature, which ensures a particularly balanced, fine, and malty flavor.
