Beer description
Authority is our first approach to fermenting wild beer with whole fruit directly in barrels. Polish ripe apricots stripped of some of their seeds were added to bourbon barrels, where they fermented for several months immersed in our Wild Ale. The long maceration time and the work of wild yeast and bacteria produced a distinctly apricot character, enriched with barrel and wild notes.
