We added a fair amount of freshly harvested Riesling grapes to our 3-year-old wild ale. The beer spent more than 5 months in their company resulting in Enology. In the aroma you will find the minerality known from white wines, citrus zest, quince, all with a distinct "funky" touch. The beer is unpasteurized, naturally refermented in bottles.
