Polly's - Galaxy Daydream

We note it time and time again, but there are definitely lifeblood hop varieties that make Polly’s beer quintessentially Polly’s. From the very first beer that really set the foundations of our reputation as one of the highest rated breweries in the country with that first Galaxy Mosaic IPA back in those halcyon Loka Polly days, to the Mosaic Simcoe DDH IPA that we poured in front of our now-peers in the industry and set the wheels in motion for what would become our Augment range, these three hops have been interwoven into our history and remain pillars of our brewing with good reason. Galaxy Daydream brings all three together for a three way dance of pulpy stonefruit notes, fresh mango, ripe pineapples, and just a hint of dank savoury notes to create an all-out smasher of a Pale Ale.
