Polly's - Razzle Dazzle

l Dorado and Simcoe is a pretty solid combination as things go. One that has weaved itself in and out of our brew plans over the course of our existence and has concreted itself as a go-to pairing for ourselves here at Polly’s HQ. How do you elevate something that works so well though? We’re eternally thankful that the industry we work in is constantly innovating and creating new hop varieties for us to utilise, and it blew our collective minds when we realised we hadn’t taken in-house favourite Bru-1 into the mix with this Champions League combo. Packaged up into one of our classic Polly’s pale ales, this beer is absolutely bursting with stonefruit sweetness, fresh cut pineapples, passionfruit, and melons at the front, with a whisper of citrus rind bitterness that keeps everything from tipping too far into cloyingly sweet territory. Sometimes you just gotta hit ‘em with the ol’ razzle dazzle!
