The first Cold IPA was created a few years ago in Portland, Oregon. The malted barley is supplemented with rice to give the beer both fullness and a dry (not sweet) character. Instead of the usual yeast for IPAs, a bottom-fermenting lager yeast is used for fermentation. The beer is very fruity with notes of pineapple and exotic fruits. It is also full-bodied and juicy, with a pronounced fruitiness and a slightly resinous finish.
