For the third year in a row, we’ve been hosting the Winter Affair international beer tasting festival, and for just as long, we’ve been brewing collaborative batches with some of the participating breweries. It’s a unique opportunity to get to know each other better, share interesting insights, and combine our expertise. The beers created as part of the Winter Affair Gossip series are the result of these meetings—they bring together beer worlds, unique recipes, and a love for the craft across countries and continents.
Among this year’s guests was the Tuscan brewery Cantina Errante, which ranks among the top of the Italian craft beer scene for spontaneously fermented beers. Together, we created a modern saison built on a pair of distinctive yeast cultures—Farmhouse Vibes and Saccharomyces "Bruxellensis" Trois. The former brings the fresh spiciness and dryness of a classic saison, while the latter is known for its ability to create complex fruit esters and subtle funky notes without the typical Brettanomyces wildness.
The result is an elegant, dry, and highly drinkable beer with notes of white pepper, stone fruit, and a light floral freshness. Saaz Shine hops underscore the purity of the fermentation profile and add a subtle herbal undertone.
