The revival of an old Berlin tradition The snowy owl has dedicated itself entirely to the classic Berliner Weisse. All beers are bottle-fermented using Brettanomyces yeast. Not too angry, so that nobody gets the idea to mix the “northern champagne” with syrup. Our whites, brewed cleanly by master brewer Dipl. Ing. Ulrike Genz, have only a slight acidity and complex fruity aromas due to the post-fermentation yeast used. Our whites are also not pasteurized or filtered. However, due to the post-fermentation yeast remaining in the drink, it has an almost unlimited shelf life and develops increasingly complex aromas over time. How do we know? Some of the yeasts we use come from bottles that are up to 50 years old.
