As for the chilli, we opted for the Mexican 'Péquin' variety, a cousin of the African 'Piment Oiseau'. Very spicy, it is classified between categories 6 (fiery) and 7 (hot) on the Scoville scale, and gives off sweet, fruity notes. In short, it's fresh but hot at the same time!
