Voatsiperifery Beetroot & Pepper Stout // A series of pungent beers on the theme of the 4 Horsemen of the Apocalypse, perfectly suited to the little game of beer and food pairing // The use of pepper in a Stout was an obvious choice for us. For us, putting pepper in a Stout was an obvious choice - we just had to decide which one! After testing a dozen different varieties, our unanimous choice was Voatsiperifery, from Madagascar. With its woody, floral and citrus notes, it complements very well the earthy, fruity profile of the beetroot, which balances well with the chocolatey, roasted side of the stout. In short, it's going to be a hard fight in your gullet!
